Ingredients
Foxtail Millet, Little Millet, Kodo Millet, Barnyard Millet, Horse Gram, Hand Pound Rice and Barley
Uses / Method of Preparation
– Combine 1 part of Porridge Mix with 7 parts of water
– Cook in a pressure cooker till the whistle goes off to about 4 times
– Check for doneness and desired consistency
Variations:
Sweet Version:
a. Add powdered jaggery to hot cooked porridge mix and stir.
b. Roast green cardamom, cashews and cloves in ghee and combine.
c. Best served hot
Savoury version 1
a. a. Add 1 tbsp of oil in a pan
b. Roast curry leaves, green chilli, mustard seeds and urad dal
c. Combine roasted mixture, 1 cup of buttermilk and Porridge Mix at room temperature
d. Add salt to taste
e. Serve cold or at room temperature.
Savoury version 2
a. Add 1 tbsp of cooking oil or ghee oil in a pan.
b. Roast dry red chilli, cashews, peanuts and curry leaves and mustard seeds.
c. Combine with cooked Porridge mix
d. Add salt to taste
d. Serve hot with ghee
